When Life Hands You Lemons

ImageYou know how life can be going so wonderfully and then suddenly it’s not? When the energy and vigor just get dried up and sucked from your body and all you want to do is lay in bed? Maybe it’s because I didn’t show up to the job I hated and no one cared to call me (guess the feeling was mutual?)  or maybe it’s just that Labor Day marks the end of summer and even though there’s still fall, winter is looming. Anytime my life is cloyingly sweet I know to look out for the lemons. Don’t let the sourness consume your whole life. After a small pity party head to the kitchen to create something soul satisfying to remind yourself from bitterness breeds beauty and a greater appreciation of sweet.

When life hand you lemons this is what you make.

Lemon-Rosemary Chicken w. Mashed Potatoes

Chicken pieces (breasts, thighs, legs whatever you prefer)

Olive oil

Fresh rosemary

Lemons

Honey

Zest  and  juice like 3 lemons into a bowl. Add in a stem or two of rosemary that has been chopped as fine as possible. Remove about a ¼ of this mixture to another bowl and set that aside. Then drizzle in about ¼ cup of olive oil to the remaining mixture. Add in chicken and let marinate at least 15 minutes. Right before you cook it season it with a good amount of salt.

To cook the chicken you can sear it then finish it the oven, grill it, or simply bake it. However the first two methods of cooking will ensure juicer chicken. When chicken comes in contact with a hot surface the outside cooks quickly and all the juices remained locked inside.

Drizzle in honey to the lemon rosemary mixture you set aside and brush over the chicken when it’s done cooking. Serve with mashed potatoes and a green vegetable.

And just in case you have a lot of lemons use those same three ingredients used in the chicken to make an awesome drink worthy of being in any fancy shamcey cocktail bar..and the plus side is you can pay 15 for the whole bottle and not one drink!

Make a simple syrup with honey, rosemary, slices of lemon. Simple syrup= 1 part water, 1 part sugar. So to make a flavored simple syrup boil down the water and sweetener with a sprig of rosemary and 6 slices of lemon, it should be thick like maple syrup. Use this syrup to mix in with liquor of your choice (I’d choose tequila, gin, or vodka) and club soda. You’ll probably never complain about life handing you lemons again.
