There is no need to spend a million dollars on a restaurant steak when it is so simple and quick to do it in your own home. As promised in Beef..it’s what’s for dinner simple tutorial on steak. 3 ingredients. 3 steps. You can do it!
What you need
Steak: Healthier choices- Sirloin, Eye of Round
Tastier choices-Rib eye, NY strip
(steak pictured is expensive grass-fed NY Strip, 28.99 a lb, 2 inches thick)
What you do:
- Season the steak generously with salt.Generously meaning don’t be shy, rub it into the meat and become one with the steak.mmm. Let it sit and absorb the salt for at least 15 minutes at room temperature.
- Heat a pan that has enough oil in it to coat the bottom, seriously in order to get that crispy, salty delicious crust steps one and two are very important. Make sure the pan is smoking hot. Yes, your house will get smoky, the fire alarm may even go off too, but it will be oh so worth it. This is the definition of “searing”
- Put the steak in the pan and cook for 4/5 minutes then throw the steak in the oven at 400 degrees to cook to desired doneness. The timing is always going to vary depending on the thickness of your steak and the hotness of your oven. I wish I could tell you an exact time to get your steak perfectly cooked every time but that simply does not exist. Cooking is all about trial and error, making mistakes, and learning. Try to undercook rather then overcook because if you cut into your steak and it’s too raw just put it back into the oven, you can never take back cooking. Just make sure you try enough before you want to cook steak to impress someone. Here are some general timelines.
Rare-cool red center-searing is probably all you need
Medium Rare- warm red center- 5 minutes in oven
Medium-warm pink center- 8-10 minutes in oven
Medium Well- hot pink center- 10-12 minutes in oven
Well done- don’t you ever!
4. Before you try to say I thought there were only three steps, this last step requires no work so therefore it’s not really a step..but don’t skip it! You must let your steak rest for 5-7 minutes after taking it out of the oven. This allows all the juices inside the meat to recirculate and become even more tasty. This way when you cut your steak the juices will be in the meat and not all over your plate.
Now just sautee some spinach and heat up some Trader Joe’s microwave rice and you have a complete meal in less then 25 minutes.
