When It’s Cold Outside (still)

I can’t believe I’m writing this post on the third day of April but alas it is cold outside! In the midst of my quarter life crisis I decided to pick up and move my entire life from California to New York. Now in theory this was an amazing idea and I knew the only thing I would hate would be the frigid temperatures. Figuring there was only one month of winter left I thought I could make it, but of course Mother Nature has decided to play some trickery here this year.


There is nothing comforting about the cold, but staying inside and making some lovely chicken soup warms me from inside out. I recently made some for my roommate because the cold had taken a toll on her immune system.Image poor steph.

It’s super easy and healthy and also freezes phenomenally so if it’s not cold where you are now (LUCKY!) make a batch and save it for a rainy day!


What you need:

Boneless/Skinless Chicken Breast/Thighs

Celery, Carrot, Onion chopped small

Herbs (thyme, oregano, basil)

Goya Tomato Seasoning




What you Do:

Season the chicken with your favorite all-purpose seasoning; sear it in the pan you plan to prepare the soup in 


Add in the celery, carrot, onions and sauté until translucent (if you have any herbs add them here)


Add the Goya seasoning

Add water

Let simmer until water reduces by half, this is where the flavor comes from


Then chop the chicken into chops lower heat and place chicken pieces inside slowly simmer until chicken is cooked through. They key here is to not boil the chicken too hard because that’s how it gets dry

Taste and adjust the seasoning, add salt, pepper, chopped cilantro and lemon juice


You can also get fancy and add other veggies, if you are being lazy frozen veggies work well like 5 minutes after you add the chicken. Also this is just a very basic recipe, take this and run! Play around and add herbs to the broth in the beginning or add cooked rice, pasta, and potatoes at the end.


So easy.so tasty. So warm.

(wait that sounded a little funny) i am goofy eccentric, and love to laugh, in fact i often laugh at the most inappropriate times. i place high value in honesty and working hard. i don’t really believe in faking it until you make it, without some base knowledge or some sort of depth to your cause. i believe in making mistakes and trying everything once as long as you bring yourself no harm and no harm to others. i am a new age hippy, my words to live by are freedom, serenity, and love. i look for signs of the world and listen. i do judge, anyone who says they do not is a liar, but i use my judgements against you to reflect back on me to see how i can better myself. i hate constraints of our society, including grammar, punctuation, and recipes. i think fast except when it comes to numbers. the culinary world has always been and shall be my safe haven and outlet. i want to inspire, teach, and learn.
